Refined Sugar Free Millionaire’s Shortbread

This is a completely innovative approach to making millionaire’s shortbread bites, keeping them refined sugar free and therefore more attractive for customers. Golden Date Juice Concentrate (golden date syrup) is used for the biscuit base and Date Nectar (Dark Date Juice Concentrate) for the caramel filling, giving Refined Sugar Free Millionaire’s Shortbread a natural caramel flavour and colour. Compared to a standard recipe, this innovative recipe allows manufacturers to decrease sugar by 31%, and increase fibre and protein by 20% and 14% respectively.
INGREDIENTS:
Shortbread

• 155g self raising flour
• 125g butter
• 100g Golden Date Juice Concentrate


Caramel

• 1 can (397g) condensed milk
• 150g butter
• 50g Date Nectar (Dark Date Juice Concentrate)
• 15g cornstarch

Chocolate Covering

• 200g refined sugar free chocolate
PREPARATION:
1. Grease a square / rectangular tin and pre-heat the oven to 150oC (130 oC Fan)/ 300oF/ Gas mark 2.
2. First make the shortbread style base. Put the flour and butter into a food processor and pulse until the mixture resembles breadcrumbs. Add the date juice concentrate and mix to a soft dough.
3. Roll out the dough to the same size as the baking tin and line the tin.
4. Bake for 25 to 30 minutes until lightly golden.
5. Leave to cool in the tin.
6. Blend the cornstarch with the date juice concentrate in a saucepan. Add the condensed milk and butter. Heat the caramel to melt the butter and bring to the boil. Leave to cool slightly before pouring on to the shortbread base. Leave to cool completely.
7. Melt the chocolate in a bowl over warm water and pour over the caramel. Leave to cool completely before cutting into squares.
