Spicy Beloved Carrot & Ginger Soup with Date Seasoning

You’re going to love this healthy soup recipe. It’s sumptuously creamy and full of incredible roasted carrot flavour. To add some natural sweetness to this winter favourite, use Date Nectar as a seasoning – a perfect match!
INGREDIENTS:
• 8 large carrots
• 2 large onion
• 4 sticks of celery
• 2 cloves of garlic
• 2 Thumb sized pieces of ginger or use ginger powder 1 teaspoon for subtle ginger flavour, 2 teaspoons for more prominent flavour, or 1 tablespoon for relatively spicy carrot-ginger flavour.
• 2 & 1/2 litre chicken or veg stock
• 2 tbsp Beloved Date Nectar
• A pinch of chopped coriander (thyme optional)
• 100 ml soured cream
EQUIPMENT:
• Large pan
• Roasting tin
• Stick blender
PREPARATION:
  1. Pre heat the oven to 180’C. Peel the carrots, put in a large roasting tin & cover with a good pinch of grounded sea salt and the Date Nectar. Place in the oven for 25 mins, tossing regularly. Roasting the carrots intensifies their flavour, which brings out the carrots’ best sweet-and-savoury notes.
  2. Cut the onion and celery into large chunks and sauté them in a large saucepan with 2 tsp coconut oil and crushed garlic until tender. Finely grate the ginger. When the veg has softened, add the roasted carrots to the saucepan with the ginger.
  3. Add the stock and turn to a low simmer for 20 mins. Use the stick blender to blend the soup to your preferred consistency (thick works well for this one)
  4. Chop the coriander and sprinkle on top with a dollop of sour cream for a nourishing and luxurious winter warmer! You won’t be able to resist a second bowl!
