Sticky Chipotle-BBQ Date Ribs

Finger lickin’ good! Serious flavours, fall apart meat...The Beloved  Date Nectar (Dark Date Juice Concentrate) adds an irresistible sweet twist to a classic BBQ sauce. Prepare to be asked what your secret ingredient is!
INGREDIENTS:
  • 2 racks of baby back ribs
  • 3 tbsp Oil (go coconut for a healthier version)
  • 2 tbsp Beloved Date Nectar (Dark Date Juice Concentrate)
  • 1 tbsp mustard powder (or Dijon mustard if you can’t find powder)
  • 1 tbsp smoked paprika (sweet or hot)

ULTIMATE BBQ SAUCE: *
  • 1 onion
  • 2 garlic cloves
  • 500ml passata
  • 3tbsp tomato purée
  • 150ml cider vinegar
  • 125g Beloved Date Nectar​ (Dark Date Juice Concentrate)
  • 1 tbsp hot chilli powder
  • 1 tbsp paprika
  • 1 tbsp celery salt
  • 3 tbsp Worcester sauce
  • 2 tbsp chipotle paste
PREPARATION:
  1. Preheat oven to 150°.
  2. Combine  the mustard, Date Nectar (Dark Date Juice Concentrate), paprika and oil into a dish and mix until combined. Cover the ribs with the marinade and leave at least 1 hour – preferably up to 5 hrs.
  3. Place the marinated ribs on the roasting rack and fill the roasting tin with about 1 inch water – it shouldn’t touch the ribs. Cover with lid or foil – again making sure the foil doesn’t touch the ribs.
  4. Bake ribs until tender but not falling apart, about 3 hours.
  5. Baste the ribs half way through cooking with the Chipotle BBQ marinade. Then 30 mins before the ribs are done, take them out of the oven and brush with the Chipotle BBQ sauce and remove the foil, return to the oven until glazed.
  6. Remove and let cool for 10 minutes covered in foil. Cut ribs into 2s or 3s and serve with extra BBQ sauce.
* MAKE THE CHIPOTLE BBQ SAUCE WHILE WAITING:
  1. Finally chop the onion and garlic and soften in a large pan with 1 tbsp coconut oil until translucent.
  2. Add the tomato purée, cook off for 2 mins, turn up the heat and add the passata.
  3. Add all the other ingredients & season to taste.
